
Our newest beer on tap is a Scottish style stone fired ale which is a light bodied ale that has hot stones dropped into it in the brewing process which caramelizes some of the sugars resulting in a few extra flavour layers.
Reading through “The Shooting of Dan McGrew” its easy to draw comparisons between character and author. McGrew and one of Canada’s most renowned poets, Robert Service, both kept revolvers and guarded gold with their lives. While in the employ of the Victoria branch of the Canadian Bank of Commerce, on the present site of the Bard & Banker, Service often kept overnight watch of the vault, his trusty revolver at his side. In Service’s honour, Phillips Brewing Company has crafted this traditional stone beer. In the brewing process, heated rocks are added to the wort to bring it to a boil. Sugars caramelize on the hot stones, resulting in an earthy, slightly sweet ale, perfect for winding down after a long day’s Service.
